The noble rot (botrytis)

Espressiveness, complexity and elegance

This is a naturally sweet wine as it is made of grapes that have concentrated their substance, raisinlike, as a result of noble botritys.

The grapes come from plots located in Mas Fonoll. It is mostly based on Chardonnay grapes to which, depending on the year's harvest, we incorporate wine procedent from the botrytis of Sauvignon Blanc, Incrocio Manzoni or Albariño.

The harvest is all by hand. And it is pressed directly using a vertical press.
Fermentation takes place under controlled temperature of 13C to 17C, during a 3 month period. It matures afterwards inside 400 l. french oak casks during 3 years before bottling.

A lively gold color. Intense flavor of apricot pulp, orange marmalede, mango and gingerbread. A rich and unctuous texture that offers full notes of tropical fruit and peach and, too, smoky notes and notes of dried flowers. Very dense and full of taste but striking too with an excellent clarity and first notes of spices. The endtaste lingers with oustanding tenacity end leaves with us smoky and spiced afternotes.

This is a naturally sweet wine as it is made of grapes that have concentrated their substance, raisinlike, as a result of noble botrytis.

This wine is from this particular plot we call Camp del Roure (the Oak Field) in Mas Fonoll located at an altitude of 800m. It is exclusively made of Incrocio Manzoni grapes afflicted of noble rot (botrytis).

The harvest is all by hand. And it is pressed directly using a vertical press.
Fermentation under controlled temperature between 13C to 17C, during three months. Afyerwrds wine is aged exclusively in stainless steel vats.

Its color is pale gold. To the nose it brings aromas of lemon peel, peach, apricot and spices, anhanced by a mellow floral note. To the mouth it is south, generous and spiced, with a strong floral beginning giving in to notes of dried fruit, citrics and honey and to a measure of lightness. We find again this floral note in the long and sweetened endtaste that shows very good persistance in mouth thanks to its acidity.
