We make our Merula out of Merlot vineyards from low yield plots located in Mas Sapera. This is a variety we allow its full late maturation until we achive its full taste, concentrated flavor and soft skin.
Hand harvest. We often destemm part of the harvest, depending on how we see the grape stems develop. Fermentation takes place in a stainles steel vat at a controled temperature of 15C. We use a very gentle pressing in the vertical press.
Cerry color with a garnet rim. A powerful aroma of red fruits and spiced notes from the aging cask. Toasted flavor notes and notes of chocolate. Strong and powerful in mouth, meaty, spiced and candied. Very structured with mature tannins.
